Can I quote for a new door and invoice the repair separately?

Yes. They are two documents for the same client. The estimate waits until it is accepted and converts then; the repair invoice goes out today.

How do I price a spring that comes in two sizes?

Keep both in the price book as their own lines with their own prices, and pick the one you fitted. Nothing has to be retyped on the driveway.

Does the customer need to be there to sign?

No. A signature is optional. Without one the document is still a complete invoice with your business details, the lines and the total on it.
